Let’s be honest though… Gluten free bakes have (justifiably) gained a reputation for being a bit sub-standard… The sort of food that ‘normal’ people don’t eat (or want to eat). For loaves – Base-line two 1 pound non-stick loaf tins with baking paper and lightly oil the sides by rubbing with a little butter or dairy free spread. I did it twice and what a waste of money time and ingredients both results were like bricks and could be used as a weapon. You begin baking the bread with the Pullman cover in place to prevent the loaf from rising into a dome, then remove the cover for the remainder of the baking time so the loaf can cook through and brown properly. We are however changing our supplier in the near future and intend to supply the product derived purely from non GM corn.

Bobs Red Mill has some interesting blends and flours for sure and many of them are certified GF which is reassuring. Using a wooden spoon, beat the mixture together vigorously to combine it into a thick, sticky dough. I think that buckwheat flour would work well in place of oat flour, as would sweet white sorghum flour. Weigh and mix together all the dry ingredients ( TIP: weigh into an airtight container and shake vigorously). Tried the recipe on the back for bread machine after not baking brea for a while and followed it to the letter.
