Beijing Soy Paste Noodles 炸酱面 is one of the top 10 most famous noodle dishes in China. You can usually find diced pork belly fried in leeks, onions, garlic, yellow soy bean paste and/or sweet wheat paste, no matter which region you're in. Cucumbers, carrots, bean sprouts, green beans, pressed tofu, fried egg and soy beans can be found either in the bowl or on the side. These accompaniments are great for absorbing the oils from the pork belly. There are many ways to cook soya beans, but one of the most popular methods is to simmer them in water until they are soft. Once they are cooked, soya beans can be used in a variety of dishes, such as soups, stews, and curries. For instance, one recent review of 12 studies suggests that women with high soy intakes prior to receiving a cancer diagnosis may be at a 16% lower risk of dying from the condition, compared with those with the lowest intakes ( 39). In addition to their vitamin and mineral content, soybeans are a natural source of polyphenols, a type of antioxidant that may help protect your body against cell damage and conditions like heart disease ( 7, 8, 9, 10). Additionally, commercial soy milk is readily available in grocery stores and it saves you the hassle of soaking, grinding, and straining soybeans. To serve, either transfer all the noodles into a large serving dish and let everyone serve themselves, or divide between individual serving plates. The natural flavor of soy milk can sometimes be a bit mild and bland for some palates. To enhance and add complexity to the dish, incorporating roasted peanuts and sesame seeds into the mix can work wonders. For instance, studies suggest that high intakes of soy isoflavones may reduce the risk of endometrial cancer by around 19% ( 41, 42). Dry roasted peanut : I prefer unsalted peanut but lightly salted is also usable based on your preference.

Keep in mind that while these concerns are common, few of them are supported by sound science. Moreover, when negative effects have been observed, they often followed the consumption of very large amounts of soy. However, the protective benefits of soy were only observed in Asian women, while Western women appeared to experience little benefit ( 40). Several studies suggest that diets rich in soy foods may help lower LDL (bad) cholesterol and raise HDL (good) cholesterol ( 13, 14, 15). Sesame oil– Toasted (ie brown-hued) as opposed to un-toasted (yellow-hued, with less sesame flavour). Here in Australia, toasted sesame oil is the norm. It’s actually hard to find un-toasted. Note the sesame oil is added to the sauce and not used for as frying fat, because it loses flavour the longer it’s cooked. High soy intakes pre- and post-diagnosis may also reduce the risk of breast cancer recurrence in postmenopausal women by up to 28%. However, this study suggests that premenopausal women may not experience the same benefit ( 39).In addition, fermented soy foods, such as soy sauce, tempeh, miso, and natto, are often considered more beneficial than non-fermented soy products.
