I don't drink a lot of gin but tried this at the distillery yesterday and loved it and bought a bottle The lavender is really evident on the nose and it has an excellent flavour either neat or mixed with the uniper evident but not dominant. Then the unique botanical mix of Cotswolds lavender and bay leaf, grapefruit, lime, black pepper and cardamom seed are added into the bespoke Holstein pot still for distillation before finishing with naturally refined Cotswolds water. Cotswolds Dry Gin is a one shot spirit, so once the hearts cut is taken from the still (at around 80% ABV) the only other treatment is to blend it to bottling strength (46% ABV with water). Due to the high volume of botanicals used in the distillation, a beautiful pearlescent cloud appears when tonic or ice is added to Cotswolds Dry Gin. To this a botanical mix of Cotswolds lavender and bay leaf, fresh grapefruit and lime peel, black pepper and cardamom are then distilled in their Holstein still, which is then cut with Cotswold water to 46% vol.

A clean fresh palate with pine spice from the juniper is followed by fresh grapefruit and coriander seed. Also delicious in an Elderflower Gin Fizz cocktail, made with gin, elderflower liqueur, lemon juice and topped with Prosecco or soda. Juniper becomes earthier on the palate, supported by the additional flavours of coriander, hot black pepper, licorice and manuka honey. Geoff Taylor of the spirits lab at Campden BRI brought a team of spirits experts down to the distillery, and they collectively selected the flagship gin recipe.
